Tortellini and snowmen

 

Making tortellini – here’s the first batch. Lessons learned – knead dough a bit more. Add an egg to filling? Maybe.  I just mostly made this up; looked at the internet a little, for the pasta dough. Cook in boiling water 3-4 minutes, add some parmesan and crack some black pepper on top. YUM.

Pasta – two local, delicious, nutritious Pot Pie eggs for every 2 cups flour, dash salt – use food processor to bring mixture to ball stage (then knead some more). Roll it out, add filling, close ’em up and either cook straightaway or freeze. Filling – 2 cups ricotta, quarter cup chopped walnuts, bunch spring onions, chopped, one pound mushrooms finely minced, sautéed in olive oil with 3 cloves garlic, salt and pepper.

You can see I was learning during that first batch. Subsequent batches should get a bit more uniform….spinach pasta next round.

WHITEOUT this morning – it was wild – maybe 50 yard visibility. Everything was a foggy, wet gray. Saw this cute snowman at the church graveyard.

  1. OMG. How COULD you? How could you make this without ME??????

    I want to come make pasta, although I honestly think we should make pierogies. potato/cheese and ricotta!
