rockfish bites with buttermilk garlic dipping sauce
Soak rockfish chunks in egg and herb (thyme, pepper) mixture for an hour or more. Roll in cracker crumbs and fry in small amount of vegetable oil, 5-6 bites at a time. Keep warm.
In a separate bowl, whisk together one clove minced garlic, two Tb mayonnaise, a third of a cup of buttermilk, juice of half a lemon, two Tb grated Parmesan cheese and a tiny shot of Worcestershire sauce. Thicken or thin to your preference with buttermilk or Parmesan cheese.
