farro and feta salad

Here’s an original recipe using farro – you may have heard of this grain, it’s being promoted in the US now. Also known as emmer, spelt and einkorn, it’s like barley. Maybe it is barley. Wikipedia  seems a bit confused about its origins, but bottom line – it’s delicious.

Tuscan Fields Farro is a sponsor this year of Eat, Write, Retreat – the food blogging workshop that I loved last year. They are sponsoring a contest, and asked 50 bloggers to create a recipe using farro. One lucky winner will get to go to Eat, Write Retreat in May. I hope it’s me!

What’s great about this simple recipe is that you probably have everything on hand, it’s quick and easy and highlights the chewy grain. Yum.

Farro & Feta Salad

1 package farro perlato – prepared as per package instructions, cooled

1 bunch spring onions, chopped

1/4 cup feta cheese, crumbled

1/4 cup toasted chopped almonds

1 cup halved purple grapes

3 Tbsp peanut oil

Mix all ingredients and serve at room temperature.

  1. I can attest to the deliciousness of this lovely dish… Kathy brought it to a gathering in Mayberry last night and didn’t bring it home… I’m having it for lunch right now!!!
